This is coming along nicely!
The Default function for controls rarely works as expected with new presets. This, I think, is due to data being present in the schematic from previous uses of the knobs. So, when a new preset is called, this hidden and unexpected data is applied, so you don’t get the set default value because the Preset Manager prim references old data still present. This is not desirable, but normal.
There is a way to solve this, but I don’t normally bother: You replace the Preset Parameter prim with a new one from the toolbox. Drag it in, select it and add the existing prim to the selection. Right-click on the selection and choose Swap links. This is then a virgin knob and you can delete the old prim.
In many knobs the default setting is called when you do a cntrl-click. But those old smaller knobs you’ve used don’t feature this facility.
I’ve attached a modified version of your better knobs. These can be set to default with a wireless trigger. Look inside to see how the "Last" prim is wired.
My Quilcom Bridgit used this kind of system to provide a global DEFAULT function.
