Continuous Knob and/or Ribbon, Sin / Cos Pot Needed

Hi,
Is there a knob that rotates 360 degrees and outputs quadrature like a Quadrature Rotary Encoder? I.E. Channel A leads Channel B clock transitions when turned one direction and Channel B leads Channel A clock transitions when turned the other. And of course be able to set the resolution to say 2 to 3600 "clock transitions"
I have looked high and low here and on the interweb and have found nothing related to this and Flowstone
This same thing could be applied to a ribbon type (not the same as) but similar to a ribbon in that as you move the mouse cursor over the "ribbon" in one direction (with the left mouse button held done) the count clocks one way (A leads B) and vise versa - again with selectable resolution.
I guess this is also similar to a 10 turn (knob) potentiometer as well. You could make a N Turn pot / knob or ribbon too.
I need more resolution for one project (10 turn pot would work).
But the other project I am creating a Sin / Cos potentiometer, and could build one out of a Quadrature Encoder which may be more universal - but heck maybe a Sin / Cos pot AND a Quad Encoder... More tools in the toolbox ! ! ! !
