FlowBoard Mini - Data Acquisition Board $19
Electronics fans here's the new FlowBoard Mini - a $19 USB board that interfaces electronics to FlowStone.
We have made the source code Open Source so you have two choices, just use what we have done and upload the finished firmware (hex file), or edit our C code using Mikro C Pro and make your own firmware.

You could build anything you like it's certainly fast enough (48Mhz), however in it's current firmware configuration it needs to be connected to the PC and FlowStone via USB.
However you could program your own firmware to be standalone - we use Mikro C Pro http://www.mikroe.com/mikroc/pic/
There are also lot's of add on Click boards available too if you do your own firmware:
