The converter I used in the piano demo is fine to use now,
the remaining slight issue is that it reproduce a deliberately played harmonic about a quarter of the time. Ideally it would not be possible to play harmonics.
So this is midi piano(NI Akoustik Piano), it does have a varying delay of under 100ms in the demonstrated trigger or latch mode. The slide or bend note where the note re-triggers on semitone intervals has a varying delay of around 25ms. I'll try and make a more high quality demo of this mode too.
This uses a hex pickup(Roland GK3)- so it has no issues reproducing polyphony.

The somewhat embarrassing square(8D) video, I haven't yet measured the delay
The regular guitar connection used is actually polyphonic!- it does use the purely mono peak counter,
but each string has it's own peak interval counter/measurer, so using 6 counters with different pitch ranges
It does too output midi(I used adirect synth in the vid), but the midi is very zippery.

I will do a strumming demo too, thanks for the idea, strumming is one technique that I cannot reproduce well with any of my techniques. I use a Fender Rock Band Mustang controller a little, it's the best strumming method for MIDI I have found yet.

most usage noise is truly lost to the translation, mutes and glides are possible though. Quantised bend, slides, hammer ons and pull-offs work fine. I did use the pitch wheel in one of my Reaktor builds- I will refine that build soon, the bend wheel is hard to tame- it reaches from the nut all the time, so I need to anull it's attack portion.
